Mushroom Omelette



  • 3 eggs
  • 1 cup sliced fresh mushrooms
  • 1 1/2  tbsp olive oil
  • 1 1/2 tbsp Water



  • Saute the mushrooms in oil in a frying pan.
  • Scramble the eggs with the water.  Add to the mushrooms.
  • Cook over medium-low heat covered.
  • Flip over when the eggs are almost set.
  • Cook the other side until done. Fold in half. Serve.
