Healthy Cookies

 

Ingredients

  • 1/4 cup light olive oil
  • 1/4 cup MCT oil
  • 1 tsp liquid lecithin
  • 1 egg
  • 1 tsp vanilla
  • 1/3 cup honey
  • 1/4 cup peanut butter

 

Beat ingredients together

 

Add:

  • 1 cup quick oats
  • 1 whole wheat flour (or less, stir in 3/4 cup and see how stiff the dough is)
  • 1 tsp baking soda
  • 1 tsp baking powder

 

Directions

  • Mix all together.
  • Bake at 350 degrees for about 7-9 minutes or until done.

 

Variations

  • 1/4 cup coconut and 1/4 chocolate chips
  • 1/2 to 1 tsp almond extract and 1/2 to 1 tsp cinnamon
  • 1/2 to 1 tsp cinnamon and 1/4 cup raisins
  • 1/4 cup chopped dates, prunes
